What you will do?

  • Oversee daily culinary operations in the retail food division, ensuring high-volume production meets quality standards across both event-day and non-event-day service
  • Lead kitchen operations including menu preparation, cooking execution, and consistent delivery of food quality and service
  • Maintain food safety plans and ensure compliance with HACCP accreditation standards
  • Support departmental success by managing budgets, controlling food costs, and coordinating with suppliers to source high-quality ingredients
  • Collaborate with the Executive Chef, General Manager, and other leaders on menu development, guest feedback, and service improvements
  • Foster team development by mentoring and motivating staff to uphold standards and deliver exceptional culinary experiences

More about you

  • Appropriate culinary qualifications with demonstrated leadership experience managing large kitchen teams in high-volume or premium commercial environments
  • Proven ability to manage food and labour costs, including menu development, costing, and inventory control
  • Strong background in ordering procedures, cost controls, and invoice handling
  • Proficiency in stock management and business technologies such as stock control systems, spreadsheets, and accounting tools
  • Excellent communication skills for effective interaction across all levels
  • Passion for food and hospitality, with a collaborative approach in dynamic team settings
