The opportunity

Delaware North Australia have a rare opportunity for a talented Chef De Cuisine - Production to join our culinary team at the Melbourne Cricket Ground (MCG).

 

As the largest sporting stadium in the Southern Hemisphere, with a capacity of over 100,000, the MCG is renowned for hosting Australian Football League (AFL) games, international cricket matches, world-class concerts, and exclusive events.

 

We are looking for a dynamic and experienced Chef de Cuisine to lead our bustling production kitchen operations. With responsibility for a team of up to 60 chefs per shift, you’ll combine your high-end culinary expertise and large-scale production experience with strong commercial acumen to meet the demands of this diverse and fast-paced environment.

What you will do?

  • Oversee the daily operations of the MCG production kitchen
  • Develop innovative menu concepts that align with current food trends and guest preferences
  • Provide strong leadership, mentorship and hands-on training to foster a high-performing, motivated team
  • Set and uphold exceptional food standards through efficient systems and processes
  • Assist in managing department budgets, food costs, utilising IT systems to drive efficiency and profitability
  • Managing performance and labour costs for permanent and casual kitchen staff
  • Championing on-site food safety and HACCP accreditation

  • Proven experience managing large-scale kitchen operations
  • A strong track record of leading and inspiring diverse culinary teams
  • Expertise in menu development, stock management, and cost control
  • Strong commercial acumen with a track record of delivering business outcomes
  • Relevant culinary qualifications
  • Proficiency in business technology, including stock control systems, spreadsheets, and accounting software
  • Excellent communication and leadership skills, with the ability to engage at all levels
