Delaware North Australia has an exciting opportunity for an Italian specialty Head Chef to lead our signature restaurant, Il Piatto at Mindil Beach Casino Resort. Our Head Chef is the heart of Il Piatto, bringing confidence, creativity, and flair to every dish. • Lead and manage the culinary team, ensuring excellence in food quality and presentation.
• Develop and execute an authentic Italian menu with fresh, local ingredients.
• Oversee menu planning, cost control, and kitchen operations for efficiency and consistency.
• Train, mentor, and motivate a high-performing team of chefs and cooks.
• Maintain strict compliance with food safety and hygiene standards.
• Work collaboratively with senior management to enhance the restaurant’s reputation.

• Sound knowledge of classic Italian cuisine with experience in stand-alone restaurants or 5-star hotels.
• Strong leadership skills with the ability to manage, develop, and inspire a diverse team.
• A friendly and flexible disposition that encourages guest satisfaction and professionalism.
• Availability to work nights, weekends, and public holidays as required.
• Must be a Head Chef with experience leading a high-quality kitchen brigade and managing a large operation whilst consistently achieving high standards of operations compliance  
• Knowledge of relevant federal and state legislation that has an impact on the food, beverage, and catering industry and workplace environments  
• Knowledge of financial and business imperatives as well as extensive experience in menu planning & design.
• Certificate IV Commercial Cookery required and/or Diploma of Hospitality, HACCP Certification, Food Safety Supervisor Certificate, and Australian Culinary Federation - Qualified Chef preferred
