Responsibilities

  • Oversee daily pastry operations, ensuring high-volume production meets quality standards for events and daily service.
  • Delivering the highest of quality in pastry and producing showpiece desserts for special events.
    Support food safety protocols and maintain HACCP accreditation standards.
  • Assist in managing departmental budgets, controlling food costs, and coordinating with suppliers to source high-quality ingredients.
  • Collaborate with the Executive Pastry Chef and General Manager on menu development, addressing guest feedback, and resolving service-related issues.
  • Lead kitchen operations, including menu preparation, cooking according to standards, and ensuring consistent quality and service standards, while fostering team development and motivation. 

What will you bring?

  • Proven experience in managing a pastry operation in a similar high-volume environment or premium restaurant's environment
  • A passion for food and creative flair with experience in showpiece highly regarded
  • Experience in ordering and inventory management, including cost controls and handling invoices.
  • A background in menu planning and design.
  • Strong leadership skills, with the ability to develop, manage, and motivate a diverse pastry team.
  • Qualification in Patisserie, Commercial Cookery or equivalent.
  • Proficiency in using business technology such as stock control systems, spreadsheets, and accounting systems is preferred.
