Delaware North Australia is seeking an Executive Sous Chef to join our distinguished culinary team at Mindil Beach Casino Resort, the Northern Territory's premier hospitality destination.

 

Mindil Beach Casino Resort resort offers a blend of luxury accommodation and world-class dining experiences nestled in a vibrant tropical paradise on Darwin's beachfront. We are looking for a passionate and innovative culinary leader to join our high performing team.

 

As an Executive Sous Chef reporting directly to the Executive Chef, you will bring a wealth of experience in both high-end and high-volume food preparation. Your modern approach to team engagement, combined with your creativity and finesse, will support our culinary team to achieve high standards. This role will be pivotal in delivering memorable dining experiences for our loyal local patrons and diverse visitors from interstate and overseas.

Responsibilities

  • Oversee Multiple Outlets: Manage multiple bustling dining outlets, including a substantial banquet operation, ensuring seamless operations and exceptional guest experiences.
  • Business Acumen: Demonstrate superior business skills, including managing and controlling costs, driving continuous improvement, and handling budget and Capex planning.
  • Team Leadership: Lead staff management, focusing on training and development in modern culinary trends. Mentor and empower chefs to reach their highest potential.
  • Culinary Innovation: Design modern menus while respecting traditional cuisine, continually striving to outshine the Darwin market.
  • Food Safety: Maintain a sound knowledge of HACCP and food safety standards, ensuring compliance across all culinary operations.

What will you bring?

  • Minimum 5 years in a similar role within a comparable operation. Casino experience is highly regarded but not essential.
  • A deep passion for modern menu design and a respect for traditional cuisine.
  • Previous experience operating within a HACCP accredited environment.
  • Familiarity with a wide range of cooking styles and ethnic cuisines.
  • Strong computer skills, experience with procurement, costings, scheduling, and proficiency in Microsoft platforms
